A Lunchbox Favourite.........Zucchini Slice



Can't get your kids to eat green veg?  Try this easy, scrumptious slice!  It is delicious hot or cold, can be made as muffins and you can literally put whatever you like in it.  I substitute the zucchini for a tin of corn, throw in some sun dried tomatoes, use peas instead of zucchini, chuck in some cut up BBQ chicken.......you really can muck around with this one.  I would love to hear other peoples combos.......

You will need:

3 zucchini, grated
1 brown onion, finely diced
2 tbs chopped parsley
6 short rindless bacon rashers, diced
1 cup of grated tasty cheese
1 cup self raising flour
5 eggs
1/3 cup of vegetable oil
salt and pepper

Line a rectangular slice pan with grease proof paper and pre-heat the oven to 180 degrees.  Put all the ingredients in a large mixing bowl and using a bit of elbow grease, mix well, making sure all the flour is off the bottom of the bowl.  Spread the mixture evenly over the slice pan and bake in the oven for 25-30 minutes or until the centre springs back when touched and the slice is golden brown.  Allow to cool for 10 minutes before removing from the tray and slicing into squares.

*  To make muffins instead, line a 12 cup muffin pan with patty cake cases.  If you don't, the slice will stick.......
