Low Fat Bircher Muesli



What a great way to start the day!  This is the breakfast of champions.......packed full of brain food (oats, blueberries, and almonds are seriously good for concentration) it is probably a good one to have after a big night on the sauce!  Gotta do something about those brain cells ;)


Serves 4-6

You will need:

2 cups of rolled oats
1 cup of low fat milk
1 cup of good quality, preferrably cloudy, apple juice
juice of 1/2 a lemon
1 apple, grated
1/2 - 1 cup of organic sultanas (depending how much you like them)
1 banana, sliced
1 punnet of blueberries
4 tbs Jalna bush honey yoghurt (plain or vanilla will do)
4 tbs of honey
1/4 cup of slivered almonds

In a large bowl combine the oats, milk, lemon and apple juice.  Stir well, cover and pop in the fridge overnight.

The next morning, grate the apple and add to the oat mixture with the sultanas.  Divide among 4 bowls and top with the yoghurt, banana, blueberries, honey and almonds.  Sit out on your deck, verandah, lawn, whatever and enjoy!

Feel free to change the topping combination.  You could use any fruit, nut or yoghurt that you like......
