Bloody Mary Oysters


Well what better way to kick off a christmas lunch than with a zesty, booze fueled, bloody mary oyster shot, straight out of the shell!  Tangy lime and horseradish are the flavour winner here along with spicy tobasco, fresh coriander and who could forget the star of the show........vodka!  These will be sure to get the party started......

You will need:

Serves 1, 2, 3 or 4

1 dozen FRESH oysters (my personal favourites are pacific)
1 tbs finely chopped red onion
1/4 cup of vodka
1 tsp of grated horse radish
1 tbs lime juice
1/2 tsp of tobasco sauce (more if you like it spicy spicy)
1 cup of tomato juice
1 tbs finely chopped coriander
Sea salt and cracked black pepper
Extra virgin olive oil for drizzling
Rocket leaves and lime wedges for garnish

In a small mixing bowl combine the onion, vodka, horse radish, lime juice, tobasco, tomato juice and coriander.  Mix really well to combine and season with salt and pepper.

Arrange the fresh oysters on a platter making sure any loose bits of shell are removed.  Pile a little rocket in the centre and top with lime wedges.  Spoon the dressing over each oyster, being rather generous.  The mixture will have a strong vodka flavour but it just goes superbly with the oysters and it is of course, Christmas!

Drizzle with a lovely, fruity extra virgin olive oil and tuck in!
