Garlic Prawn Pizza



This pizza is popular with the whole family and doesn't pull too hard on the purse strings either.  Quick, easy and deliciously fragrant, it is an impressive meal any time of the week.

Serves 2-4 if you are a good sharer!

You will need:

2 store bought pizza bases* (make your own if you prefer)
200gm of green prawn meat
1 jar of store bought pasta sauce*
1 cup of grated mozzarella
1/2 a cup of grated parmesan
Grated rind of 1 lemon
1/2 a tsp of chilli flakes
8 sprigs of lemon thyme, leaves removed and stalks discarded
2 large handfuls of baby rocket
Extra virgin olive oil for drizzling
A good squeeze of lemon juice
Sea salt and cracked black pepper

Pre heat the oven to 200 degrees celsius.  Spread a good amount of the tomato pasta sauce evenly over the pizza bases and divide the mozzarella between the two.  Top with the prawns, chilli flakes, garlic, lemon thyme and lemon rind and sprinkle over the parmesan.  Pop the pizzas in the oven and cook for approximately 10 minutes or until golden and bubbling.

In a small bowl combine the baby rocket, olive oil, lemon juice and sea salt and pepper and toss well to combine.  Remove the pizzas from the oven and slice into 6 even pieces.  Top with the baby rocket and serve.......

*  I use the wood fired Pane di Casa bases available at Coles.  I also use the Barilla Basilico pasta sauce for the pizzas.  It is a cheat but a good one!
