The Best Corn Ever


I had a little trouble naming this dish.  I really wanted to convey the sounds people made when I served them this corn (think pigs at a trough or foraging for truffles), however, I am not sure they would appreciate it!  It is, quite literally, the best corn you will ever eat.  I first had this in New York at a Cuban restaurant and I know the Mexicans serve this as a street food staple.  This is my version.

Serves 6

Olive oil
6 large fresh corn cobs, outer layers and stringy bits removed
1 cup of good quality whole egg mayonnaise*
Juice of 1/2 a lime
1 tsp of cayenne pepper (don't be shy, you want this good and spicy)
1/2 a cup of freshly grated parmesan cheese (please only use fresh)
1/2 a bunch of fresh coriander, roughly chopped
Lime wedges to serve
Sea salt and pepper

After you have prepared the corn, shove a really long metal skewer right up the middle.  Brush with a little olive oil, season with salt and pepper and heat your BBQ griddle to nice and hot.  Pop the corn on the Barbie and cook on all sides for approximately 25 minutes turning continuously until it is lovely and smokey and charred.

In a small bowl, combine the mayo, lime juice and cayenne pepper, season with salt and pepper and set aside.

When the corn is cooked, arrange on a platter.  Spoon over generous amounts of the mayonnaise, sprinkle over the parmesan and top with the chopped coriander.  Serve with wedges of lime, serviettes and toothpicks!

*For good quality mayonnaise you just can't go past the S&W whole egg or the Best Foods whole egg.  Please don't compromise on this as crappy mayo could ruin this sensational dish!
