Maplenana Bread


Over ripe narnies in the fridge?  Kids bored with their lunchbox content?  Want something sweet, moist and a little indulgent that could actually be almost classified as good for you?  Sounds too good to be true however, I assure you it is not!  It is all those things and more!!

Serves 1-10 ( depending on if you are a good sharer!)

1 cup of self raising flour, sifted
1 cup of wholemeal self raising flour, sifted
2 tsp of baking powder
3/4 cup of brown sugar
1/2 tsp of cinnamon
1/4 tsp of allspice
1/2 tsp of ground ginger
2 very ripe bananas, mashed
1 cup of buttermilk
2 eggs
1/3 cup of vegetable oil
1 tsp of vanilla extract
1/4 cup of maple syrup

Preheat the oven to 180 degrees.  Sift flours into a large bowl and add baking powder, spices and sugar and mix to combine.  Add the rest of the ingredients and stir well to combine.  Spoon mixture into a greased 11cm x 26cm loaf tin and pop in the oven.  Bake for 40-45 minutes or until a skewer comes away clean when inserted in the centre.  Enjoy warm or cold with a nice spread of butter.......
