Chorizo, Corn and Coriander Slice



I am always looking for new ways to jazz up the Kids lunch boxes and admittedly they are pretty sick of zucchini's after the bumper crop we had this summer.  So good ole zucchini slice gets a makeover with some punchy new flavours!  Spicy chorizo, sweet corn and the unique and pungent flavour of coriander take this classic snack out of the dark and into the light!

Makes approximately 16

2 chorizo sausages cut into small chunks
400gm tin of super sweet corn kernels, drained
1 brown onion, finely diced
1 cup of self raising flour
1 cup of grated tasty cheese
5 eggs
1/4 cup of vegetable oil
1 cup of coriander leaves, roughly chopped
cracked black pepper

Pre heat the oven to 180 degrees.  Line a 33 x 25cm slice pan with baking paper.  Sprinkle the tray with a little water before lining the tray as it will stop it slipping around.

Heat a large fry pan and gently fry the chorizo chunks until golden. Set aside to cool slightly.  In a large mixing bowl combine the onion, corn, flour, cheese, eggs, oil, coriander and chorizo.  Mix the ingredients together really well and season with pepper.  Pour the mixture into your lined tray and bake in the oven for 25 minutes or until golden and springy to touch.  Allow the slice to cool a little before slicing into squares. Enjoy!
