Sublime Cheese Sandwich



Lets face it, people are easily impressed when something looks as fab as this and even more impressed when they realise that all it takes is some quality ingredients and literally five minutes from fridge to plate.   I guarantee there will be a fair amount of oohing and aahing when you bring out this little party starter.  In fact, it might even go viral!

It is nice to prepare this about half an hour before your guests arrive so the cheese will be at room temperature.

Serves 6

1 large, good quality wheel of camembert or brie (I prefer camembert)
1 tub of cabernet paste (Maggie Beer brand) or similar......quince, spiced pear etc at room temperature
A handful of baby rocket leaves
A drizzle of good quality extra virgin olive oil
A small sprinkle of sea salt

Crackers of your choice

Remove the camembert from its wrapping and make sure it is as cold as it can be as this makes it much easier to slice.  Take a large knife and slice horizontally,  right through the middle of the camembert.  It may take a bit of work but be patient as you don't want to wreck the cheese or more importantly cut yourself.  If you get to the middle and it is a bit of a struggle, gently remove the knife and start from the other side.  When you get to the middle again you can usually just pull the cheese apart.

Spread the cabernet paste liberally over one half of the cheese and place a handful of rocket leaves on top.  Put the lid back on and cut a nice wedge out.  You will be tempted to eat it however I urge you not to as you will ruin the overall effect of the presentation ;)

Place on a serving plate and drizzle with olive oil, sprinkle with a little sea salt and serve with crackers or crisp bread of your choice..........
